Annual UNH Therapeutic Riding Program Luncheon at the Fidelity Investments Jumper Classic

The Fidelity Investments Jumper Classic is the largest Grand Prix event in New England and is held annually in Hampton Falls, New Hampshire. It features Olympic level riders and horses competing in Olympic level show jumping. The event draws as many as 10,000 spectators and features over 40 vendors offering everything from souvenirs to saddles.

The annual UNH Therapeutic Riding Program luncheon at the 2010 Fidelity Investments Jumper Classic was a huge success. The luncheon was sponsored by Porsche and featured a menu of lobster bisque, and popular salads and wraps from Pearls Catering of North Hampton, N.H. There was also beer donated by Smuttynose Brewery and soft drinks donated by Coca Cola. About 100 people attended the event and many of them wore fancy hats in order to participate in the fancy hat contest.

Horse sculpture made of 46 cakes, 500 pounds of icing

The edible horse cake in the food court at Lexington Center stands at 16 hands and is all buttery and sweet — but don't dare stick a finger in the icing. The cake sculpture, at the International Equestrian Festival at Lexington Center, is the creation of members of the Kentucky International Cake Exploration Societé, or ICES. When cake designer Leigh Sipe heard about the equestrian event, she thought about creating a horse out of cake to show the art of cake decorating. It took two days to build the horse, and hours of prep work were involved before the horse's frame arrived at Lexington Center. "We had four people making 500 pounds of chocolate buttercream icing," Sipe said. She made 22 cakes that are 20-by-20 inches, 12 cakes that are 18-by-18 inches, and two half-sheet cakes. Decorator Geraldine Kidwell baked 10 cakes that made up the horse's head, neck and chest. Deciding how to make the mane and tail was a challenge. "But once we figured out what to use, it was a simple thing," Sipe said. The mane and tail contain 10 pounds of 36-inch strips of licorice.

The horse's legs are made of Rice Krispies treats, which were made from five boxes of Rice Krispies cereal, five bags of marshmallows and 2 pounds of butter. The horse cake sculpture, which is not edible because glue was used in the construction, will be on display throughout the Alltech FEI World Equestrian Games, which end Oct. 10. Even more elaborate cake sculptures will be on display when about 2,000 cake decorators come to Lexington in August 2013 for the ICES convention.

5th Annual Showcase to be Held at Suffolk Downs

The Communication Alliance to Network Thoroughbred Ex-Racehorses of New England (CANTER NE), a volunteer group dedicated to finding new careers for racehorses at Suffolk Downs, is happy to announce its fifth annual “Suffolk Showcase” in the stable area at Suffolk Downs on Sunday, October 24 from 9:00-12:00 p.m.

The Showcase is an opportunity for trainers to present horses nearing their retirement from racing to a large group of interested buyers. CANTER NE board members and volunteers will run the event and be available to answer questions from prospective buyers.

As the Suffolk Downs racing season nears its November 13 conclusion, CANTER NE’s focus is to help local trainers find new careers for their retired racehorses, be it in competitive jumping, trail riding, or simply lawn-grazing. CANTER NE provides these trainers with an effective, cost-efficient way of finding new homes for their horses, where they will continue to be given proper care. Horses sold through CANTER NE go directly from their trainers to new homes, eliminating the costly need to care for them at foster facilities. The organization does not benefit financially from these sales.

Paris Hilton & Shaquille O'Neal try to buy Einstein, World's Smallest Horse.

Einstein, the pint-sized pinto and world's smallest horse, isn't for sale.

Not even Paris Hilton or Shaquille O'Neal -- who've expressed interest in acquiring the New Hampshire-bred miniature horse -- could write a large enough check for Einstein, owner Charlie Cantrell said.

"Shaq would have to arm-wrestle Paris Hilton for him," said Cantrell, jokingly, from his home in Gilmanton. "We've been contacted by so many people, but he's not for sale. He's priceless."

O'Neal learned of lovable little Einstein on a preseason trip to Manchester with the Boston Celtics Wednesday. The 7-foot, 1-inch "Big Shamrock" inquired about buying the horse, and a tweet from O'Neal reconfirmed his desire yesterday.

"How much I like dat horse," O'Neal tweeted to sports writer Kevin Gray.
